The popularity of this relatively young coffee drink has steadily been gaining momentum since the 1980s when she first showed up on the coffee scene, reportedly in Australia. Or is that New Zealand? Her exact history is a little sketchy and seems to depend largely on who’s telling the story. One thing is for certain, though, since her arrival, she has been quickly gaining momentum on the beloved cappuccino and may even be edging it out on the popularity charts. However, Flat White uses micro-foam instead of froth. Micro-foam is the layer of dense, tiny bubbles forming between the bottom layer of hot milky liquid and the top layer of large froth bubbles forming when milk is properly steamed.
